Ernest de Munck was the son of the cellist François de Munck (1815-1854), who provided him with his first education. He gave concerts from the age of eight. He studied under Adrien-François Servais at the Conservatory in Brussels. In 1855 he finished his studies there with a First Prize.

He lived in England for several years, giving concerts and teaching at the Guildhall School of Music. From 1868 to 1870 he lived and worked in Pairs. In 1871 he was engaged as first cello player at the Court Orchestra in Weimar. He played a Stradivari from 1710.

In 1879 he married the soprano Carlotta Patti and they often performed together. They lived in the USA for several years and settled in London afterwards. There he was engaged as a professor at the Royal Academy of Music. He died in London in 1915.
