Jakob Stolz was a student of Simon Sechter and Anton Bruckner. He started a music school in Graz in 1857. In 1862 he married the concert pianist Ida Bondy. They had 13 children and the composer and conductor Robert Stolz is their son.

Stolz wrote theoretical works on musicology and as a composer he created works for the pinao, songs, chamber music and church music. In Graz he was active as a chamber musician for more than 60 years.
