George Barbu Stirbey was the son of prince Barbu Stirbey (1799-1869). In 1840 he was sent to Paris to study. After the Romanian Revolution of 1848 he became a prince. He returned to Wallachia, at that time rules by his father. He served in the army he was forced to leave Romania after the occupation by the Russians in 1853. He joined the French cavalry and continued his military education.

After the Russians were defeated during the Crimean War he returned to Romania, where he became a general and Minister of Foreign affairs from 1866 to 1867. He obtained French citizenship and from 1869 he lived in France and settled at the Château de Bécon in Courbevoie. He started an affair with Valérie Simonin and adopted her daughter before he married her in 1895. His wife died in 1919 and he was buried in the same mausoleum at Père Lachaise after his own death in 1925.
