Ellen Daub was engaged at the Schauspielhaus in Frankfurt am Main by Richard Weichert in 1924. She debuted as Katharina in Frank Wedekind's "Liebestrank". She played many other parts in Frankfurt and was well liked at the Römerberg Festspiele that existed until 1939. In 1935 she was Gretchen in Goethe's "Faust".

She continued performing until 1961. In that year she retired into private life. She died in Darmstadt in 1965. Her husband was the actor Max Noack.
