Hermine Elssler was a cousin of the more famous dancer Fanny Elssler. Her father Alois was a younger brother of Fanny's father Johann Elssler. Little is known about her youth and she probably grew up as a foster daughter of Eugen Wilhelm Graf Haugwitz.

Hermine was a member of the ballet group of the Kärtnertor theater in Vienna from 1824 to 1836. During that period she also appeared in Paris. From 1837 to 1849 she worked in London. In 1849 she ended her dancing career and retired from public life. She settled in Vienna where her foster-father's financial means enabled her to found scholarships for students. She died in Vienna in 1895.
